Ingredients:

– 2 cups broccoli stems, finely chopped
– 1 can chickpeas, drained and rinsed
– 1 small onion, diced
– 2 cloves garlic, minced
– 1 tsp cumin
– 1 tsp coriander
– 1/2 tsp smoked paprika
– Salt and pepper, to taste
– 1/4 cup chickpea flour (or flour of choice)
– Cooking oil, for frying

For the bowl:

– Cooked quinoa
– Mixed greens
– Sliced cucumber
– Cherry tomatoes
– Pickled red onions
– Tahini dressing

Instructions:

1. In a food processor, pulse the broccoli stems, chickpeas, onion, garlic, spices, salt, and pepper until well combined but still slightly chunky.
2. Transfer the mixture to a bowl and stir in the chickpea flour until the mixture holds together.
3. Form the mixture into small falafel balls and flatten slightly.
4. Heat a thin layer of oil in a skillet over medium heat. Fry the falafel in batches until golden and crispy on both sides, about 3-4 minutes per side.
5. Assemble your bowl with cooked quinoa, mixed greens, sliced cucumber, cherry tomatoes, pickled red onions, and the falafel. Drizzle with tahini dressing and enjoy!
